* 4 boiled eggs

* 1 cup besan (gram flour)

* 1 tbsp finely chopped coriander

* Salt to taste

* Water as needed

* Prepare the eggs:

Boil the eggs, peel them and cut each egg into halves.

1.In a bowl, add besan, rice flour, red chilli powder, turmeric, garam masala, fennel seeds, coriander and salt.

2.Add water little by little and whisk into a thick, smooth batter. It should coat the egg nicely without becoming too runny.

3.Heat the oil over medium heat.

4.Dip each boiled egg half into the batter, making sure it is completely coated.

5.Carefully place the coated eggs into hot oil and fry until golden brown and crispy.

6.Remove and place on a kitchen towel to absorb excess oil.

7.Serve hot with sliced onions, coriander and a sprinkle of chilli powder.
