Ingredients
For the Rice
* 2 cups basmati rice (washed and soaked for 30 minutes)
* 4 boiled eggs
* 3 cups water
* 2 tbsp oil or ghee
Vegetables & Herbs
* 2 medium onions, thinly sliced
* 2 tomatoes, sliced
* 5–6 green chilies, slit
* ½ cup fresh coriander leaves
* ½ cup mint leaves
* 1 tbsp ginger-garlic paste
* Juice of ½ lemon
Whole Spices
* 2 bay leaves
* 1-inch cinnamon stick
* 4 cloves
* 3 green cardamoms
* 1 star anise
* 1 tsp cumin seeds
Spice Powders
* 1 tsp red chili powder
* ½ tsp turmeric powder
* 1 tsp coriander powder
* 1 tsp biryani masala
* ½ tsp crushed chili flakes (optional)
* Salt to taste
Method
Step 1: Fry the Eggs
Heat 1 tablespoon oil in a pressure cooker. Sprinkle a pinch of turmeric, red chili powder, and salt over the boiled eggs. Lightly fry them for 2–3 minutes until golden. Remove and keep aside.
Step 2: Prepare the Base
Add the remaining oil or ghee. Add cumin seeds, bay leaves, cinnamon, cloves, cardamom, and star anise. Sauté for a few seconds until aromatic.
Step 3: Cook the Onions
Add sliced onions and cook until they turn golden brown. Reserve a small portion for garnishing if desired.
Step 4: Add Aromatics
Stir in the ginger-garlic paste and sauté until the raw smell disappears.
Step 5: Cook Tomatoes
Add green chilies and sliced tomatoes. Cook until the tomatoes become soft and release oil.
Step 6: Add Spices
Mix in:
Red chili powder
Turmeric
Coriander powder
Biryani masala
Salt
Chili flakes (optional)
Cook for 1–2 minutes.
Step 7: Add Herbs
Add chopped coriander and mint leaves. Mix well until fragrant.
Step 8: Add Rice
Drain the soaked rice and gently mix it into the masala. Sauté for 2 minutes without breaking the grains.
Step 9: Pressure Cook
Pour in 3 cups of water and add lemon juice. Taste the water and adjust the salt if needed. Place the fried eggs on top.
Close the lid and pressure cook:
1 whistle on medium-high heat, then
5 minutes on low heat.
Turn off the heat and let the pressure release naturally.
