Ingredients

For the Rice

 250 grams basmati rice

4 green chilies, slit

3medium potatoes, cubed

2 large onion, thinly sliced

1 tomato, chopped

2 tablespoons oil or ghee

2 tablespoons fried onions

1 tablespoon kasuri methi

Fresh coriander leaves

Fresh mint leaves

Salt to taste

Whole Spices

1 bay leaf

1-inch cinnamon stick

3 cloves

2 green cardamoms

1 star anise

For the Masala Curd Mixture

* ½ cup thick curd (yogurt)

* 1 teaspoon red chili powder

* ½ teaspoon turmeric powder

* 1 teaspoon coriander powder

* 1 teaspoon garam masala

* 1 teaspoon biryani masala

* Salt to taste

For Frying Potatoes

Cubed potatoes

* A pinch of turmeric powder

* A pinch of red chili powder

* Salt to taste

* 1 tablespoon oil

Preparation

Wash the basmati rice thoroughly and soak it for 30 minutes.

In a bowl, combine curd, red chili powder, turmeric powder, coriander powder, garam masala, biryani masala, and salt. Mix well and keep aside.

Toss the potato cubes with salt, turmeric powder, and red chili powder.

Method

Step 1: Fry the Potatoes

Heat oil in a pressure cooker. Add the seasoned potato cubes and fry until lightly golden and partially cooked. Remove and keep aside.

Step 2: Prepare the Biryani Base

In the same cooker, add a little more oil if needed.

Add:

Bay leaf

Cinnamon

Cloves

Cardamom

Star anise

Drain the soaked rice and add it to the cooker.
