* 1 cup whole green gram (moong), washed and soaked (optional)
* 4 green chilies, chopped
* 6–7 garlic cloves, crushed
* 1 medium onion, finely chopped
* 1 medium tomato, finely chopped
* ½ tsp turmeric powder
* 1 tsp coriander powder
* ½ tsp garam masala
* ½ tsp cumin seeds
* ½ tsp mustard seeds
* Few curry leaves
* 2 tbsp oil
* Salt to taste

* Water as needed
Method
Step 1: Cook the Green Gram
1.Wash the green gram thoroughly.
2.Add it to a pressure cooker with enough water.
3.Pressure cook for 4–5 whistles or until the green gram becomes soft.
4.Keep aside.
Step 2: Prepare the Masala
1.Heat oil in a pan.
2.Add mustard seeds and let them splutter.
3.Add cumin seeds and curry leaves.
4.Add crushed garlic and sauté for 1 minute.
5.Add chopped onions and fry until light golden.
Step 3: Add Tomatoes & Spices
1.Add chopped tomatoes and cook until soft and mushy.
2.Add green chilies and mix well.
3.Add turmeric powder, coriander powder, garam masala, and salt.
4.Cook the masala for 2–3 minutes until the oil starts separating.
Step 4: Combine
1.Add the cooked green gram along with its cooking water.
2.Mix everything well.
3.Add extra water if needed to adjust the consistency.
4.Simmer for 8–10 minutes on low flame so the flavors blend together.
Step 5: Garnish & Serve
1.Switch off the flame.
2.Garnish generously with fresh coriander leaves.
