North Karnataka Style Fresh Coconut Sambar Recipe | Easy Traditional Coconut Sambar
This flavorful sambar is a perfect companion for rotti, chapati, and rice. Made with fresh coconut, peanuts, garlic, tomato, and traditional Uttar Karnataka spices, it has a rich texture and bold homemade taste. Ingredients
* 1 cup fresh grated coconut
* 2–3 tablespoons peanuts
* 1 tomato, roughly chopped
* 6–7 garlic cloves
* A handful of fresh coriander leaves
* A few curry leaves
* 2 tablespoons sambar powder
* 2 tablespoons North Karnataka-style masala khara
* ½ teaspoon turmeric powder
* Small lemon-sized ball of tamarind (soaked in water and extracted)
* 1 teaspoon jaggery (adjust to taste)
* Salt to taste
* 2 tablespoons oil
* 1 teaspoon mustard seeds
* 1 teaspoon cumin seeds
* Fresh coriander leaves for garnish
* Water as needed
Method
Step 1: Prepare the Masala Paste
Add fresh coconut, peanuts, coriander leaves, garlic cloves, chopped tomato, sambar powder, North Karnataka-style masala khara, and turmeric powder to a mixer jar. Grind everything into a smooth paste, adding a little water if needed.
Step 2: Prepare the Tempering
Heat oil in a pan. Add mustard seeds and cumin seeds. Once they begin to splutter, add crushed garlic and curry leaves. Sauté for a few seconds until fragrant.
Step 3: Cook the Sambar
Add the prepared coconut masala paste to the pan and mix well. Pour in water according to your preferred consistency. Add tamarind extract, jaggery, and salt.
Step 4: Simmer
Bring the mixture to a boil and let it simmer for 10–15 minutes on medium heat. Stir occasionally to prevent sticking and allow the flavors to blend well.
Step 5: Garnish and Serve
Turn off the heat and garnish with freshly chopped coriander leaves.
