Ingredients
* 6/7boiled eggs
* 3 medium onions, roughly chopped
* 3 tomatoes, chopped
* 10–12 cashews
* 8–10 garlic cloves
* 4–5 green chilies
* ½ cup curd (yogurt)
* Fresh coriander leaves
* 2 tbsp oil
* 1 tsp turmeric powder
* 1½ tsp red chili powder
* 1 tsp coriander powder
* ½ tsp garam masala
* Salt to taste
* Water as needed.
Method
1. Fry the Eggs
Heat 1 tbsp oil.
Add turmeric, chili powder, and a pinch of salt.
Toss the boiled eggs until lightly golden (as shown in your photo).
Remove and keep aside.
2. Prepare the Masala
In the same pan, add onions, garlic, and green chilies,cashews.
Sauté until onions turn golden.
Add tomatoes and cook until soft.
Cool slightly and grind into a smooth paste.
3. Make the Curry
Heat remaining oil.
Add the ground paste and cook for 5–7 minutes.
Add turmeric, chili powder, coriander powder, and salt.
Beat the curd and add slowly while stirring.
Cook for 2–3 minutes.
4. Simmer
Add 1–1½ cups water.
Bring to a boil and simmer for 5 minutes.
Add fried eggs and cook for another 5–7 minutes.
5. Finish
Sprinkle garam masala and chopped coriander leaves&kasuri methi.
Simmer for 1 minute and switch off.
Serving
Serve hot with:
1.Jowar roti (North Karnataka style)
2.Chapati
3.Steamed rice.
