Easy Tomato Pulao Recipe | South Indian Tomato Rice in Pressure Cooker

Ingredients
Rice
200 g basmati rice
2½ cups water
Vegetables
3 tomatoes (for puree)
1 small tomato, chopped
2 onions, thinly sliced
8–10 garlic cloves
6–8 green chilies
½ cup coriander leaves
Nuts
4–5 cashews
Whole Spices
2 bay leaves
1-inch cinnamon stick
4 cloves
2 cardamom pods
Spice Powders
1/2 tsp turmeric powder
1 tsp red chili powder
1 tsp garam masala
1 tsp coriander powder
Tempering
1 tsp mustard seeds
1 tsp cumin seeds
Other
3 tbsp oil or ghee
Salt to taste
Method
Step 1
Wash 200 g rice thoroughly and soak for 20 minutes. Drain and keep aside.
Step 2
Blend 3 tomatoes into a smooth puree. Keep ready.
Step 3
Grind coriander leaves, garlic, green chilies, and cashews into a smooth paste.
Step 4
Heat oil or ghee in a pressure cooker.
Step 5
Add mustard seeds and cumin seeds. Let them splutter.
Step 6
Add bay leaves, cinnamon, cloves, and cardamom. Sauté for a few seconds.
Step 7
Add sliced onions and fry until golden.
Step 8
Add the prepared green masala paste and cook for 2–3 minutes.
Step 9
Add tomato puree and chopped tomato. Mix well.
Step 10
Add turmeric powder, red chili powder, garam masala, and salt. Cook until the mixture thickens and oil starts separating.
Step 11
Add soaked rice and gently mix.
Step 12
Pour 2½ cups water and stir once.
Step 13
Pressure cook for 2 whistles or cook covered until the rice is fluffy and done.
Step 14
Let the pressure release naturally. Fluff the rice gently.
