Ingredients:
For Ranjaka
* 15 fresh red chillies
* 10 to 12 garlic cloves
* 5 to 6 curry leaves
* 1 tbsp jaggery
* Small lemon-sized tamarind
* 1/2 tbsp cumin seeds
* 1/2 tbsp methi/fenugreek seeds
* Salt as per taste
* Coriander leaves (optional)
For Tadka
* 1 tbsp oil
* 1/2 tsp mustard seeds
* Pinch of hing/asafoetida
Preparation Method
Step 1: Dry Roast the Spices
Heat a pan and dry roast cumin seeds and methi seeds on low flame until aromatic. Let them cool completely.
Step 2: Grind the Ingredients
In a mixer jar, add:
Fresh red chillies
Garlic cloves
Curry leaves
Tamarind
Jaggery
Roasted cumin seeds
Roasted methi seeds
Salt
If available, add a few coriander leaves for extra flavor.
Grind everything well into a smooth or slightly coarse chutney without adding water.
Step 3: Prepare the Tadka
Heat oil in a small pan. Add mustard seeds and let them splutter. Add hing and switch off the flame.
Pour this tadka over the prepared Ranjaka and mix well.
