**Ennegayi Recipe (Stuffed Brinjal Curry) – Homemade Style**
Ennegayi is a classic North Karnataka-style stuffed brinjal curry that is rich, flavorful, and packed with roasted spices. This version is simple, homely, and made with everyday ingredients—perfect for a comforting meal with jowar rotti, chapati, or rice.
### 🥘 Ingredients
* 4–5 small brinjals (eggplants)
* 1 onion, finely chopped
* 4–5 garlic cloves
* 1 tomato
* 3 tbsp grated coconut
* 4 tbsp peanuts
* 1 tsp coriander seeds
* ½ tsp cumin seeds
* 1 tsp red chili powder (adjust to taste)
* ¼ tsp turmeric powder
* ½ tsp garam masala
* Salt to taste
* 3–4 tbsp oil
* ½ tsp mustard seeds
* Fresh coriander leaves for garnish
### 🍳 Instructions
**1. Prepare the brinjals**
Wash the brinjals, cut them into halves or make slits (as preferred), and soak them in salted water to prevent discoloration.
**2. Roast and grind the masala**
Dry roast coconut, peanuts, coriander seeds, and cumin seeds until aromatic. Let them cool, then grind into a coarse mixture.
Add tomato, red chili powder, turmeric, and garam masala. Grind again into a smooth, thick paste (use very little water).
**3. Fry the brinjals**
Heat some oil in a pan and fry the brinjals for about 5 minutes until slightly soft. Remove and let them cool.
**4. Stuff the brinjals**
Carefully stuff the prepared masala into each brinjal. Keep the remaining masala aside.
**5. Prepare the curry base**
In the same pan, add oil. Once hot, add mustard seeds and let them splutter.
Add chopped onion and garlic, and sauté until golden and fragrant.
**6. Cook the masala**
Add the remaining ground masala and cook for 2 minutes until the oil starts to separate.
**7. Add stuffed brinjals**
Gently place the stuffed brinjals into the pan. Add salt as needed and mix carefully.
**8. Simmer**
Cover and cook on low flame for 6–7 minutes until the brinjals are fully cooked and soft.
**9. Garnish and serve**
Garnish with fresh coriander leaves and serve hot.
